Fall Quarterly Newsletter 2007
Dear Friends,
Our efforts to raise awareness of solar cooking among key U.S. government decision-makers and the general public are increasing. In the past month, Washington D.C.'s Channel 9 News televised a report on Solar Household Energy, we demonstrated the HotPotTM at the U.S. State Department of Refugee Services, and we presented at the Washington D.C. Green Festival.
The response has been enthusiastic and signals an increasing interest in solar cooking. To accommodate the growing demand for purchase of HotPots, we now sell them directly from our website (www.she-inc.org). Proceeds from sales fund our philanthropic projects in Latin America and Africa.
Our 2007 Annual Report is now posted on our website (www.she-inc.org/ar2007.pdf) and provides detail on our efforts to bring the benefits of solar cooking to communities around the world. We hope you can help us in our advocacy efforts and share your interest with neighbors and friends. Direct them to our website. Make a donation. Purchase a HotPot, and save the planet one meal at a time.
Thank you,
Marie-Ange Binagwaho

Sizzling HotPot Recipe
From late spring to early fall, climate zones beyond the tropics can be ideal for solar cooking, saving time and money, in addition to maximizing the hot, direct sunlight. One of our favorite recipes follows.
Eggplant Euphoria
1 Large eggplant peeled & diced
1 Onion minced
1 cup Saltine crackers crushed (but not finely)
2 tsp Baking powder
2 tbsp Butter melted
2 Eggs
2 fl. oz. Evaporated milk to moisten
½ cup Parmesan of cheddar cheese grated
Blanch eggplant for 4 minutes and drain (optional). Mix all ingredients except cheese in greased covered pot and solar cook for 4 hours or so. Lightly sprinkle cheese on top and cook for an additional 1/2 hour. Do not add salt, there is enough in the saltine crackers.

Thanks for your interest in our mission.
